This Vanilla Crazy Cake often referred to as a vanilla wacky cake and vanilla depression cake is the vanilla version of crazy chocolate cake. Vanilla crazy cake gained popularity during the depression era when staple ingredients were hard to come by.
It is super easy, cheap to make and requires no fancy kitchen gadgets.
What you Need to Make Vanilla Crazy Cake?
All-purpose flour, sugar, baking soda, salt, vegetable oil, vanilla extract, white vinegar and cold water, use your favorite frosting and rainbow sprinkles or you can skip frosting if you like and dust the cake with powdered sugar.

How to Make Vanilla Crazy Cake?
• Preheat oven to 350°F degrees. Lightly spray a 9X9-inch baking pan with nonstick cooking spray
• In a large mixing bowl, add dry ingredients and mix well
• Form three caves in the dry mixture. In one add the vinegar, in the second add the vanilla extract and in the final one add the oil
• Pour water over the top and using a whisk or wooden spoon, mix together until fully combined
• Transfer your vanilla batter in the lined pan
• Bake for 25-30 minutes or until cake tester comes out clean
• Remove from oven to cool completely
Frosting a cake is the fun part. Once your cake is cool completely make your Vanilla Cream Cheese frosting.
To make cream cheese frosting beat together cream cheese, butter, powdered sugar and vanilla until smooth and well combined
Spread cream cheese frosting with spatula all over the cooled cake. Add sprinkles if desired. Sprinkles are the easiest way to turn a plain cake into a birthday cake or Easter cake!

How to Store Vanilla Cake?
Since the cake frosting is made with a lot of cream cheese you will need to store any cake in the refrigerator.
Just cover with a lid or wrap tightly in aluminum foil. Then store in the fridge for up to 7 days
How to Freeze Vanilla Cake?
Just allow the cake to fully cool and then freeze for up to three months. Thaw in the fridge the night before you plan to eat, or sit on the counter for about an hour for a quick thaw.

Ingredients

  • For the cake:
  • 1½ cups all-purpose flour

  • 1 cup sugar

  • 1 teaspoon baking soda

  • Pinch of salt

  • 5 tablespoons vegetable oil (or canola oil)

  • 1 teaspoon vanilla extract

  • 1 tablespoon white vinegar

  • 1 cup cold water

  • For the Cream Cheese frosting:
  • ½ cup butter, room temperature

  • 8 oz cream cheese, softened

  • 2 to 3 cups powdered sugar

  • 1 teaspoon vanilla extract

  • For garnish:
  • Rainbow sprinkles, optional

Directions

  • To make cake:

  • Spread cream cheese frosting with spatula all over the cooled cake and top with rainbow sprinkles, if desired
  • Serve
